Information

Join Kristen for a day of cheese making, cooking and sharing a seasonal lunch. Together we'll explore the art of crafting cheese, seamlessly weaving it with the vibrant flavours and essence of the season.

In this class you will learn how to make buttermilk ricotta, yoghurt, labne, marinated labne, mascarpone, cultured butter and a simple hard cheese for you to mature at home.
You’ll also learn how to incorporate your freshly made cheese (and whey!) to create a delicious lunch on the day.

Lunch will include:

Baked ricotta
Flavoured/ compound butters
Whey and potato focaccia
Seasonal salad

Whipped ricotta with candied peel, pistachio, dark chocolate and shortbread
Whey fermented sodas

You’ll take home: buttermilk ricotta, labne, mascarpone, a simple hard cheese to mature at home, cheesecloth, a comprehensive recipe booklet, plus all the knowledge and inspiration you’ll need to make everything confidently at home.

We recommend you arrive hungry!

Suitable for: absolute beginners with the busiest of lifestyles and the smallest of urban kitchens, passionate home cooks and experienced chefs.

Please ensure you wear closed shoes.
Bring your favourite apron to wear and 4 x 1L containers for cheese, some jars for the leftover whey & bag to take home your cheese.

Minimum age 15.
